Chicken Tortilla Soup


This might be one of the most flavorful and super easy soup ever. Trust me. I've always wanted to expand my expertise on soups and this just did it for me. Honestly, I never expected it to taste THIS GOOD. 

2 boneless chicken breasts
1 cup onion chopped
1/2 c green pepper
1 can seasoned black beans
1 can mexicorn
2 tsp garlic powder
2 tsp paprika
2 tsp cumin
2 tsp chili powder
1 tsp cayenne 
2 tsp minced garlic
2 cans chicken broth
1 c salsa
1/2 tsp olive oil
Sautee onions and green peppers in olive oil just until translucent (2 min)
Add corn and beans to vegetable mixture
Sprinkle on all of the spices
Once vegetable mixture has been stirred place chicken breast directly into pan and sear on both sides for about (3 min). Add chicken broth. 
Add cup of salsa
Stir and simmer on low for about 30 minutes. Shred the chicken into bite sized pieces.
YUMMMM.
You can always take out or add extra ingredients. For instance with peppers you may want to choose a variety of peppers to give this dish an extra boost of color (red, orange, yellow, green). You may want to add another type of bean. If you're a corn lover feel free to add extra and incorporate white corn. The spices can be decreased of increased to your preference. I must say this dish is spicy so if you shy away from it definitely shun the cayenne. Also if you feel like this dish has too many steps just add all of the ingredients plus the spices at once and just boil and simmer. Serve with tortilla chips and shredded cheese. Remember keep it simple but ever so delicious!
