Korean BBQ Short Ribs

Koreans absolutely love their BBQ. We keep the ingredients simple and light, yet the finished dish is ever so impacted with world of flavor. This recipe is so easy you'd probably scoff at it. The key points in making this dish heavenly is the quality of your short ribs. I buy mine at Kroger for about $25 for 3lbs of ribs. The quality is amazing as the ribs are perfectly marbled and the cuts are thick. 
3 lbs short ribs
1 large potato chopped into chunks
1 onion finely sliced
4 tbsp soy sauce
2 cups water
1 inch nugget of ginger
3 tbsp minced garlic
2 tbsp white wine/vodka
3 tbsp sugar/honey/agave (add more if you like it sweeter)

1. Wash the ribs under cold water and allow the meat to bleed out for about 10 minutes. Make two slits on top of the meat. 
2. Make the marinade in a large pot: soy sauce, garlic, onions, ginger, water, sugar, alcohol
3. Once the marinade comes up to a boil add the ribs and simmer on medium high heat for about 45 minutes until the sauce has reduced. 
4. Within about 20 minutes till the ribs are done add the potatoes. (if you add the potatoes too early they will get soggy. you can also add carrots if you'd like)
5. In the end the sauce should have reduced to a jam like consistency. Warn you the sauce with have a layer of oil as the meat contains a lot of fat. Skim it off. If you have leftovers, the fat will solidify in the fridge and it will be easier to skim off the fat. 

You can be all prissy and fork and knife this dish or just be aggressive and dive into that meat!
