Chicken Enchilada

Hambre? Muy Muy! Showcasing my best friend's chicken enchilada recipe - Mindy (love you!) This past weekend she came to visit me from Texas and we had the most amazing time together. Talk about hardcore, snorting, tummy cramps, cheeks spasms laughing. Hands down the best 5 days I have spent with anyone! 
We decided to cook for each other so she made me enchiladas. Before her dish I wasn't the biggest enchilada fan but her bombdigidity enchiladas blew me away! I'm a sucker for mexican dishes and this is one of my favorites. 

Ingredients:
1 medium onion minced
2 jalapenos minced
4 tsp minced garlic
3 tbsp hot mexican chili powder
2 tsp cumin
1 can tomato sauce
1 cup water
1 large tomato diced
1 lb chicken breasts
1 c shredded mexican cheese
12 small flour tortillas
Saute onion & jalapeno in an oiled pan over medium high until it's translucent
Stir in spices and garlic
Preheat oven to 425
Add chopped tomatoes, water, & tomato sauce. 
Simmer until it's slightly thickened (5min)
Place the chicken breasts in the sauce. Cover the pan and heat for 15 min
Place chicken aside to cool for shredding
Strain sauce through a fine sieve
Combine vegetable mixture with chicken 
Slab on the filling. Microwave tortillas to be more flexible
Lightly spray the tops with cooking oil and place in oven for 5 min
Remove from oven and pour on the sauce
Sprinkle on that cheese and bake 15 min
Spice it up: If you're a cilantro lover (I'm not) add it If you want the filling with some extra oomph mix in some sour cream to make it creamy. 
Dishes for the week: 
Place a small amount on tortilla and roll it up skinny and bake in oven for taquitos. 
Use the filling for quesadillas or even a mexican pasta bake. 
Make a dip out of it! Mix with cream cheese, top with cheese, bake and serve with tortilla chips. 
Top it off on a taco salad.
Mix mixture into a tamale.
